Chocolate Baby Cakes -
RECIPE -
Ingredients:
-50 g soft unsalted butter, plus more for greasing
-350 g best dark chocolate
-150 g caster sugar
-4 large eggs, beaten with
-1 pinch salt
-1 teaspoon vanilla extract
-50 g plain flour
Directions:
1 - you will need 6 individual pudding moulds and buttered baking parchment.
2 - pre-heat oven to 200 degrees.
3- putting in a baking sheet at the same time.
4- lay 3 of the moulds on a sheet of doubled baking parchment.
5- draw around them, remove and then cut out the disks as marked.
6- press them into the base of tins.
7- melt the chocolate and let to cool slightly.
8- cream together the butter and sugar and gradually beat in the eggs and salt, then the vanilla.
9- now add the flour, and when all is smoothly combined scrape in the cooled chocolate, blending into a smooth batter.
10- divide the batter between 6 moulds.
11-quickly whip the baking sheet out of the oven, arrange the litle tins on it and replace it in the oven.
12-cook for 10-12 minutes, extra 2 minutes are needed if the mixture was fridge cold.
13-as soon as you take them out of the oven, tip them onto smal plates or shallow serving bowls.
14-serve with whipped double cream or double cream unwhipped, creme fraiche, creme anglaise or ice-cream.

I chose to make Chef Gordon's chocolate baby cake dessert for my first recipe. This particular dessert recipe consists of lots of melted chocolate mixed in with an egg and floured base. I didn't think it would be that hard to make, but with the recipe his website gave me, it took me forever just to convert the ingredients. They are simple steps though, you just have to make them the right way :
Step 1. First of all you're going to need 6 individual pudding moulds for the baby cakes. If you don't have those you can easily substitute them for anything in that shape or form. (I used a rubber muffin tin type thing)
Step 2. Then you want to pre-heat the oven to 200 degrees, and put an empty baking sheet in at the same time.
Step 3. After you pre-heat the oven you take the chocolate and place it in a saucepan to melt. Once the chocolate has melted you let it cool, slightly.
Step 4. Then you will cream together the butter and the sugar and gradually beat in the eggs and salt, then the vanilla.
Step 5. Now you add the flour and when everything is combined well and smooth you can scrape the cooled chocolate, blending it into a smooth batter.
Step 6. Divide the batter into the 6 pudding moulds. Then cook for 10-12 minutes (extra 2 minutes are needed if the mixture was fridge cold).

Step 7. As soon as you take them out of the oven, tip them onto small plates or shallow serving bowls. Serve.
This is what my finished product turned out to be. When I was baking my Chocolate Baby Cakes I required much more cooking time than what the original recipe called for. Mine were in the oven for almost half an hour, and near the end I even turned up the temperature on the oven because it was long past the time it was supposed to be but they just weren't cooking. No matter how long I left them, every time I checked they would still be doughy on the inside and around the edges. In the end though, they turned out pretty good-considering I've never even heard of a baby cake before I read his recipes.
Critiquers -
I didn't stay in the kitchen to watch her make these but I could smell them down the hallway with my door closed. I really like the flavor of them; they're kind of sweet from the chocolate and they almost taste like a brownie. The outside is tender and crispy which was really good because the middle was smooth and almost creamy and the two textures went really good together. I've never tried one of these before but this one was really good.

I don't know what you would name this dessert because this was my first time trying it, but if i was told to give it a name it would have to be something nice. It smelt like brownies fresh out of the oven, and tasted like them too. With the simple addition of the creamy, pudding filled center, the dessert was much better than the average brownie.

This was my dessert for the night and I thought it was really good. All my desserts are good but this one tasted like an advanced brownie. The chewy part around the outside was soft so you could really taste the creamy stuff in the middle. And that stuff was what made it so good. When you had the outer layer with the middle they go really good together. This was really good with milk.
