South African Meal -
Bread - Soetkoekies
Ingredients:-2 cups flour
-1/2 teaspoon baking soda
-1/2 teaspoon cream of tartar
-1 teaspoon ground cinnamon
-1/2 teaspoon ground ginger
-1/2 teaspoon ground nutmeg
-1/4 teaspoon ground cloves
-1 cup brown sugar
-4 ounces chopped almonds
-1/2 cup chilled butter, cut into small pieces
-2 eggs, lightly beaten
-1/4 cup port wine or 1/4 cup sherry wine
-1 egg white, beaten

Directions:
- Combine the flour, baking soda, cream of tartar, cinnamon, ginger, nutmeg, ground cloves, brown sugar, and almonds in a large bowl.
- Add the butter and cut into the flour mixture.
- Add the beaten eggs and red wine and mix dough together vigorously until it can be formed into a ball.
- Preheat oven to 350°F.
- On a lightly floured surface, roll the dough into a rough circle about 1/4" thick.
- With a cookie cutter, cut the dough into 2-inch rounds.
- Arrange the rounds about 1 inch apart on a buttered cookie sheet.
- Continue cutting cookies, then brush each gently with the egg white.
- Bake for 15 minutes, until golden brown.
- Remove to a rack to cool completely.

Directions:
- The secret to perfect lemonade is to make a simple syrup by dissolving the sugar in warm water so that it’s dispersed evenly instead of sinking to the bottom. So if you have a stove handy, heat the sugar and water in a small saucepan and stir until its completely dissolved; otherwise just stir very well.
- Extract the juice from the lemons. I use my Granny’s juicer but you can do this anyway you like.
- Pour the juice and sugar water into a jug, throw in the raisins and leave for a while, overnight if possible, to allow them to start fermenting and give it a fizz.
- Before serving add about two cups of cold water and a bag of ice to the jug – more or less, depending on how strong you want it to be. If the lemonade is still a little sweet for anyone’s taste, chuck a slice or two of lemon into the glass.

Appetizer - Phyllo Triangles
Ingredients:
-1/2 lb/225 g ricotta, fresh semisoft farmer's cheese, or Mexican queso fresco
-1 large egg
-Heaped 1 Tbsp finely chopped fresh cilantro
-4 sheets phyllo dough or warqa, plus more in case of breakage
-Olive oil for brushing
-1 egg yolk, whisked
-Honey
-Light olive oil or vegetable oil for frying
-1 Tbsp toasted sesame seeds
Directions: In a medium mixing bowl, blend the cheese, egg, and cilantro with a fork.
On a clean, flat work surface, unroll the phyllo sheets. Cut into strips about 3 in/7.5 cm wide and at least 9 in/23 cm long. Arrange a couple of the strips facing away from you; cover the remaining strips with plastic wrap to keep them from drying out. Lightly brush the strips with olive oil.
Place 1 Tbsp of the cheese filling on the end of each strip closest to you. Fold over to form a triangle, then fold again to form another triangle, and so on to the end. Brush the end of the triangle with egg yolk and fold the loose end over the brushed yolk. Place the triangles on a plate without letting them touch. Repeat with the remaining phyllo strips and cheese filling.
Have ready 6 dessert plates. Place a generous dollop of honey in the middle of each.
In a large skillet or sauté pan, heat at least 1/2 in/1.25 cm of oil until the surface shimmers. Reduce the heat to medium. Working in small batches, gently place the phyllo triangles in the oil and fry, turning once, until firm and golden brown, 30 seconds to 1 minute. Transfer with a slotted spoon to paper towels to drain.
Place 2 or 3 rolls on each plate, drizzle with honey, and sprinkle with sesame seeds. Serve hot.

Directions: If using an oven, preheat your broiler. If using a grill prepare it so the flame is on medium heat. You can also sauté the kefta, if an oven or a grill is not readily available.
Combine all the ingredients in a large mixing bowl and mix well. Allow the mixture to sit for an hour, to allow the flavors to properly blend.
Use a ¼ cup measure to divvy up the meat. Mold the meat around a metal skewer [one that is oven safe], tapering the end of each kefta to prevent the meat from slipping off the skewers during cooking. Mold three kefta per skewer. Place the skewers on the broiler rack 4 inches from the heat or on the grill over hot coals.
Turn frequently to brown the kefta evenly until the meat is done, about 10 to 15 minutes. [Makes 4 servings]

Put the vegetable oil in one hole, vinegar in the second hole, and 1 1/2 teaspoons of the vanilla in the third hole. Pour the cold water over the top and stir until smooth.
- Bake at 350 degrees F (175 degrees C) for about 20 minutes. Ice cake while it is still hot.
- To Make Icing: In a saucepan over medium heat melt the butter or margarine. Add the cocoa and remove pan from the heat. Stir in the salt, milk and 1 teaspoon vanilla. Mix in the confectioners' sugar until desired consistency is attained. Spread icing over a still hot cake.
