Chocolate Fondant -

- 50g melted butter, for brushing
- cocoa powder, for dusting
- 200g good-quality dark chocolate, chopped into small pieces
- 200g butter, in small pieces
- 200g golden caster sugar
- 4 eggs and 4 yolks
- 200g plain flour
- Caramel sauce (see 'Goes well with') and vanilla ice cream or orange sorbet, to serve

First you brush the melted butter over the inside of the pudding mold, I just used muffin tins.Then you place the muffin tin in the fridge or the freezer.
Next you brush more melted butter over the chilled butter, and add some cocoa powder.
Place a bowl over a pan of barely simmering water, and slowly melt the butter and chocolate together.
Remove the bowl from the heat and stir until smooth. Let cool for approx 10 min.
In a separate bowl, whisk together the eggs and yolks with the sugar until thick and pale.
Sift the flour into the eggs, then beat together.
Pour the melted chocolate into the egg mixture until all the chocolate is added and the mixture is completely combined.
Evenly divide the batter in to the muffin tins.
When oven is heated to 200 C, cook the fondants for 10-12 minutes until the tops have formed a crust. Leave to sit for a minute before turning out. Then you can loosen the fondants to take them out of the muffin tins. (I didn't do the caramel thing on the plates, I guess I could have but I didn't have caramel anyways so I didn't)
